Fish Taco

I’m not much for fish tacos, I like the Swedish style Americanized Mexican tacos style… but fish tacos were requested so fish tacos it is!
I like to think I am fairly efficient in the kitchen and don’t like when people tell me how to cook – when I did one of my internships the breakfast chef always kept singing Sinatras “I Did It My Way” when I questioned his ways, thinking I had a better way to deal with things.
So when my friend said I had to make the fish tacos with white cabbage, a special salsa and so on, I got pissed of and made the tacos my way!  

Yellow Corn Tortillas
Romain Lettuce
Garlic Aioli (erh, mayo with fresh garlic)
Baked white fish seasoned with salt, pepper, lemon, butter and white wine
Corn, Mango and Pineapple salsa with fresh chillies
Topped with Alaskan Crabmeat

Awesome!

Happy New Year!

We were tossing back and forth on what to do for New Year Eve, and at it the end it turned out no one really wanted to do anything special so we ended up at our place. Jon and Jessica were the chefs of the night!
We played pictionary waiting for the countdown and then danced through the night!

1st of Advent

So today is really the first day of Christmas, and since I love Christmas so much, I had to decorate the house! I walked down the street to pick up a tree.
Then home to decorate and make gingerbreads.

First taste of this years glogg!

Homemade Glögg

I decided to make my own Glögg this year and found an awesome recipe here.
5 liters (10 pints) dark beer

2 kg (4.5 lb) sugar
6 large potatoes
7-8 dried figs
1 orange
500 g (1 lb) raisins
1 cinnamon stick
1 large fresh ginger 
500 g (1 lb) muscovado sugar
15 g (0.5oz) Cloves
15 g (0.5oz) Cardemum
1 vanilla bean
2 fresh hot chilies
3 pieces of Bitter Orange
50 g fresh yeast


I did not have all of this so I altered a little, like used brown sugar instead of muscovado sugar, currants instead of raisins, used dry yeast and ditched the bitter orange all together.
Mix everything together in a big pot, cover and let sit for 3-6 weeks.

Pumpkin Carving

It’s Halloween soon so we decided to carve pumpkins. It’s my first time carving pumpkins.

You get a lot of left over pumpkin meat when you carve pumpkins so we made pumpkin soup. I think we have enough soup for a week now.

Takoyaki

Takoyaki for dinner, it is so delicious!

I made a rhubarb and strawberry pie for dessert.

Midsummer Party

Midsummer is a big deal in Sweden. I invited a few friends over to celebrate and introduce them to Pickled Herring.
I made a smörgåstårta (Sandwich Cake) as well.

I had herring for the second time in my life.

Herring plate with fresh potatoes, sour cream and chives.

Guests had made their own flavored snaps that we all tried out.

Never been a big fan of the snaps, I’m just drinking it because it is a tradition. The icy glasses were very cool though.

We didn’t have a midsummer pole to dance around, but we do have this traffic cone in the living room that got to serve as a midsummer pole so we got to dance the Little Frog dance!

Some guests arrived later, just in time for the leftovers/midnight snack!
